Project Overview
The Michael L. Parson Meat Science Education & Training Laboratory is a $35 million, 25,000-square-foot facility scheduled to open in August 2026. The building will become one of the most advanced meat science education spaces in Missouri, featuring modern classrooms, workforce training areas and research laboratories focused on meat processing, food safety and innovation in meat science. Designed to support both students and Missouri’s meat processing industry, the facility will provide hands-on learning opportunities and advanced resources for education, training and research.
